Apr. 13: Pepper Crusted Ahi With Three Raw Sauces And Hawaiian Sea Salt

This is a great way to put your old juicer back to work. Especially for the warmer months while you’re looking for healthy alternatives to accompany your grilled meats and fishes. Run whatever vegetables you’ve got in the juicer, a splash of lemon or grapefruit juice and some good salt.
6 oz or so of fresh Ahi
1 teaspoon ground pepper
1 teaspoon sea salt (try and find some different salts from around the world)
½ lemon for juice
¼ cup beet juice + a splash of ginger juice
¼ cup carrot juice
¼ cup spinach juice + a splash of lemon juice and
bring a sauté pan to heat with some oil,rub fish with pepper and salt and fry til crisp on one side. I serve the fish rare with one crisp side for the color and texture contrast.
Onto a large plate pour one section of each juice, set fish onto sauces, a sprinkle of salt and enjoy.
